Situated in Salisbury Township in an old stagecoach inn, Bolete (pronounced bo-LEET, Latin for “wild mushroom”) has amassed a long list of prestigious national awards and nominations since opening in 2007. With years of culinary training and restaurant experience between them, owners Lee Chizmar and Erin Shea—he’s the chef; she’s the general manager—met in Boston and returned to the Lehigh Valley where Lee grew up, to raise a family and open a restaurant.
 
Since day one, Bolete’s farm-to-table menu has been a reflection of a commitment to fresh and local: whether in the tavern or in the dining room, seasonal ingredients abound in creative house-made and freshly prepared dishes. (Lee even butchers and smokes their own fish and meats.)
