Peppered Couscous

Serves 4

In small saucepan, mix together

 

1 ¼ cups chicken broth,

½ cup frozen corn kernels,

¼ cup julienne red bell pepper,

½ t seasoned pepper blend

¼ t salt. 

¾ cup couscous

 

Bring to a boil over high heat.  Stir in ¾ cup uncooked couscous.  Remove from heat, cover and let stand 5 minutes.  Stir in 2 T thinly slice cilantro.
